Reason for picking C++ even now? If you used another language, you would become proficient in that language, so why not choose something which is modern & popular today like, idk maybe, Python. And why still choosing C++, which is one of the most complex language?

Python is not a suitable language for developing a DAW, IMO. Rust is the only other option that I am aware of which would make sense, but I'm used to C++ so I'd probably stick to (a subset of) it
